There is a chill in the air along with a fresh breeze. The nights are drawing in and yes you’ve guessed it, it will soon be crispy Autumn. My absolute favourite season of the year. Bright blue skies, but cold! Crunchy leaves, conkers and that special autumnal scent in the air. Its this time of the year that I cook meals and stock my freezer. I love having cupboards bursting with jams, chutneys, pastas and snacks! I’m a nibbler. I like to pick all day, I know its not ideal, but if I’m at home working on my laptop I’m within an easy walk to what I call the ‘naughty cupboard’.
Now my lovely Autumn puffs are a perfect treat and will keep in a sealed container for about 3 days. However they only last the day in our house. Great for the children’s lunchboxes or a sneaky treat with a cuppa. These are incredibly easy to make and prepare.
1 packet, ready made puff pastry, rolled out to the thickness of a pound
2 large cooking apples, peeled, cored and chopped
40g granulated sugar
1 tbsp honey
1 lemon zest
half juice of a lemon
30g sultanas
1 tsp cinnamon
1 egg, whisked
Preheat the oven 190C
1. Roll out the pastry into a rectangle. You can also buy ready rolled puff pastry, ideal size.
2. Peel and chop the apples into tiny cubes.
3. In a frying pan add the apples, honey, cinammon, zest and juice of the lemon. Stir and cook for about 5 minutes.
4. Sprinkle in the sugar, cinammon and sultanas. Cook for a further two minutes until the apples are just tender.
5. Spoon on to the puff pastry leaving a space all the way round. Egg wash all the way round and roll longways, like a giant long sausage.
6. Cut into sections and place onto parchment paper, egg wash the top and sides, cook for 20 minutes.
