Italian Cookery with Carmela – Pasta soups and sauces

Join Italian cook and author Carmela Sereno Hayes for a pasta soups and sauces masterclass. Learn how to make pasta e fagioli – a hearty pasta and bean soup – as well as mastering the perfect spaghetti carbonara sauce with no cream. You will also learn how to make a red pepper and ricotta pasta sauce.

You will be provided with a list of ingredients to buy in advance and cook along with Carmela.

Gluten free students can be accommodated with advance notice – please email museums@northampton.gov.uk if you follow a gluten free diet and would like to receive an alternative ingredients list.

To be able to access the workshop you will need to use Zoom from your smartphone, tablet, laptop or PC. The talk will be a private Zoom meeting and joining details will be sent after a ticket has been purchased. You will be able to join the call using video or audio only if you would prefer not to appear on screen.

Italian Cookery with Carmela – Risotto and arancini

 Italian cook and author Carmela Sereno Hayes will guide you to make a fresh seasonal risotto from scratch. Whilst you are tucking into the risotto Carmela will demonstrate how to make, fill, roll and fry risotto balls (arancini) with a pre-prepared and chilled risotto.

You will be provided with a list of ingredients to buy in advance and cook along with Carmela.

The recipes in this workshop are gluten free.

Italian Cookery with Carmela – Italian desserts

Make delicious desserts with Italian cook and author Carmela Sereno Hayes. Carmela will guide you to make a zabaglione crema made with whipped egg yolk, sugar and marsala (alcohol is optional), cooked over a bain-marie, which can be served as a dessert or protein rich breakfast. You will also learn how to make amaretti biscotti – soft crackle baked cookies, perfect to dip into the zabaglione – as well as a Neapolitan Easter pie of baked rice infused with strega.

We are delighted to be welcoming back Carmela Sereno Hayes to Bay Tree Cottage for 2021. Carmela specialises in the art of making pasta and is the author of four beautiful cookery books 'A Passion for Pasta' and 'Southern Italian Family Cooking', 'How to make simple pasta' 'Northern & Central Italian Family Cooking', and 'Pasta Fresca',  due for release 13th May 2021.

Come and join her workshops throughout the year and learn how to cook simple, inexpensive, flavoursome dishes using good quality seasonal ingredients...perfect for enjoying with family and friends.

Spend an evening learning how to make three types of pasta known as cavatelli, gnocchetti sardi and farfalle, followed by a demonstration of a seasonal filled pasta tortellini, served with a sausage and saffron sauce and a pea and ricotta pesto. When all the cooking is complete, you will be able to sit back and sample the results accompanied by a glass of prosecco!
