Helping Britain ‘Bake Brave’ on World Baking Day.
On Sunday the 19th May It is World Baking Day. A day to make bake, decorate and enjoy cakes and bakes in all forms possible.

Here is one of my favourite cakes.
This is simplicity at its best. This is my own spin on a Victoria sandwich, ‘Italian style’!!
8′ tin, greased and lined
Preheat the oven to 170C, cook for 25 minutes
175g butter, softenend
175g golden caster sugar
4 large eggs
175 self raising flour
55g crushed amaretto
Filling
150 ml double cream, whisk
1 tbsp amaretto liquor and a little more if you like more of a kick
Proprio perfecto………………………
1. In a mixer add the sugar and butter and mix until soft and light.
2. Add the eggs one at a time along with 1 tbsp of flour every time you add an egg. This will ensure the mixture doesn’t split.
3. Now add the remaining flour and the crushed amaretto biscuits. Stir well.
4. Split the mixture between the two cake tins and bake for 25 minutes until golden.
5. Whip the double cream until soft peaks are formed, add the amaretto liqueur and mix well. Spread between the layered cake.
6. Decorate with sieved cocoa powder.
Allow to cool and then spread with the delicious amaretto cream, perfect with coffee.
