There is nothing better than popping on your favorite rose printed apron, floating into the kitchen, pushing the radio button on for a little light jazz and then start cooking and baking. However in my world its not quite so straight forward. The joyful school holidays are upon us and as well as teaching, writing my book and entertaining my four children I still have all of the other boring and tedious jobs of running the house.

So its the summer holidays, and lets all embrace having the children at home. Engage with the children in the kitchen. Get them off the computers and lets get their minds working with measurements and their hands mixing and pulling dough apart, all great key learning objectives. A great way to teach the children as well as enjoy time together and cook up something incredibly delicious.

Today we chose to make ‘Piadine’ flat breads, traditionally from Rome. Quick, no need for the dough to rise and totally fail proof. Perfect. A great afternoon activity. These piadine are delicious with salads and  dips. I fill mine with fresh mozzarella and tomato with a drizzle of olive oil and balsamic, simply fold the piadine and enjoy. Scrumptious…….

180g strong white flour
1 tsp salt
1 tsp mixed Italian dried herbs
1 tbsp olive oil
110ml warm water.
This makes 4-6 piadine.
1. Mix all of the ingredients in a stand mixer with a dough hook. 
2. Turn out on to a board and knead for 5 minutes.
3. Cut the dough into 4 portions and roll out into disks. Cover until ready to cook.
4. Take a frying pan and on a medium heat add a little olive oil. Add in the piadine and cook for 2 minutes on each side, until golden and textured.
Serve immediately.
