Pizza making, dough and toppings with a traditional Italian Peroni
How to make the perfect pizza and calzone (folded pizza). Anyone for a sweet pizza too using nutella, hazelnuts and fruit. A great alternative dessert or snack. Mini stuffed dough balls filled with mozzarella, basil and baked peppers.

Italian Breads – Using Carmela’s pizza oven – (weather dependent)
Italian Bake Off style, learn how to make delicious flavoured Italian bread. Including a focaccia with a freshly infused herb oil, fennel bread, semolina bread, stromboli and grissini sticks. Bring along a small basket to take away your freshly baked Italian breads.

Italian pasta making and gnocchi day course.
Learn to make pasta the Italian way, from a simple dough, to spaghetti, filled ravioli, farfalle bows, pasta gnocchi and tomato pappardelle. Pasta making is a hand’s on course. Also an added gnocchi demonstration, simple potato puffs in a tomato sauce. Sit down to enjoy your delicate pasta with a glass of vino.
Bring along a container to take freshly made pasta home.

Super sausage making!
Using fennel, chilli, garlic to create Italian flavour full plump sausages. Fresh herbs will also be key to the perfect taste. Using a sausage machine that has been in my family for over 30 year! Mince our meat, flavour and stuff……., incredible fun to be had!! BBQ, Sausage butty anyone!!

Risotto & Polenta made easy.
Learn to make a simple seasonal risotto and master using polenta in savoury and sweet dishes. Risotto and a glass of prosecco for lunch.

Seafood & fish day.
Fillet fish of the day and bake en papillote and serve with a fresh salsa verde, Italian fish pie with a polenta and mashed potato top, polenta bread crumbed fish fillets and alioli dip, seafood risotto and a fabulous fillet of white fish flavoured with pesto and wrapped in parma ham. Hungry yet!
Lunch and wine included (Please note that the fish dishes may change depending what we are able to find n the day, also the fish courses change with seasonality)

Italian Desserts
We will begin by making an absolute classic tiramisu with a Southern Italian twist, followed by a panna cotta with a fruit berry salad and sauce, zabaglione served warm over pan fried peaches, and an affogatto, espresso and vanilla ice cream. If time allows then a little baking too, dark chocolate and amaretto cake………Delicious and fresh served with espresso.
