I would love to have chickens in my garden, but my hubby is less convinced at the moment!! However I still am lucky to occasionally benefit from fresh eggs from my lovely friend Sheila, who lives just up the road in another local village. What better present can you give someone than a homemade gift, produce from the garden or fresh eggs!!

So there is nothing better than baking a cake or making a delicious frittata with fresh eggs. The eggs are so yellow. This frittata is very simple and takes about 10 minutes from start to finish!!

7 fresh eggs
30g Parmesan
1 small courgette
1 small red onion
fresh basil small bunch or 2 large leafs of giant basil
salt and pepper to season

Large leaf Italian basil….

1. In a frying pan add about 3 tbsp of olive oil (a good glug) and fry off the diced onion and courgette and cook until cooked and slightly golden.
2. In a bowl crack all the eggs and whisk. Add in the Parmesan, torn up basil (this basil does taste a little lemony too, its very delicious) and a little salt and pepper. If you fancy a little heat, add a little chili now!!

3. In the frying pan with the fried off courgette and onion, add another glug of olive oil, put the heat up and tip in the egg mixture. With a spatula push the mixture down and allow to cook on one side. Then place a plate on top of the frittata and flip it onto the plate.
4. Now tip the frittata back into the frying pan and cook the other side.
Slice and enjoy with a salad or pack the frittata into fresh bread and enjoy!!
