Come out of the winter and hop into the Spring, a very pretty, tasty and interesting time of the year. Nights are becoming lighter, buds are starting to show and it becomes a wonderful time also for food. Season changes and seasonal food becomes available too. A change of flavour and ingredients. My classes are made up of a small group, so intimate, relaxing, fun and informal, ending with delicious fresh results.

Italian pasta making and gnocchi day course.
Learn to make pasta the Italian way, from a simple dough, to spaghetti, filled ravioli, farfalle bows, beetroot pappardelle and spinach mezzaluna filled pillows. Pasta making is a hands on course, so bring along your apron. Also an added gnocchi demonstration, simple potato puffs in a tomato sauce. We will then sit down to eat our delicate pasta with a glass of vino.

Super sausage making!
Using fennel, chili, garlic to create Italian flavour full plump sausages. Fresh herbs will also be key to the perfect taste. Using a sausage machine that has been in my family for over 30 year! Mince our meat, flavour and stuff……., Incredible fun to be had!! Sausage butty anyone!!

Risotto & Polenta made easy.
Learn to make a simple spring risotto and master using polenta in savoury and sweet dishes.

Seafood and fish day.
Italian mussels in a delicious tomato sauce, polenta & breadcrumb adult fish fingers, Italian fish pie with a polenta & mashed potato crust. Fish of the day en papillote with salsa verde, fish of the day wrapped in pesto and parma ham.

Antipasti with a Southern Italian twist, This is an evening demo.                             
Learn how to make basil and green olive pesto, caponata aubergine dip, a variety of bruschetta toppings, flavouring olives, mozzarella stack and a Insalata tre colore…..
Enjoy tasting the antipasti with a glass of wine. A perfect night out for you and your friends.

Pastry, step by step
Learn how to make, rough puff, choux, shortcrust and sweet pastry.
Then for the fun. Choux buns, amaretto and berry bakewell, eccles cakes, chocolate tart and a roasted pepper tart.
Lunch included. This is a new course, so places are limited.

Saturday 18th May
Mother & daughter…..Adult & child baking.
Fun with your child. Get messy in my kitchen. Make and decorate 10 cupcakes to take home. Decorate with handmade butter cream, decorative flowers, sprinkles and edible glitter……..Tea and juice included.

Tuesday 21st May
Italian Breads
Italian Bake Off style, learn how to make delicious flavoured Italian bread. Including a focaccia with a freshly infused herb oil, ciabatta, piandine, stromboli and grissini sticks. Bring along a small basket to take away your freshly baked Italian breads.
