Panna cotta, meaning set cooked cream. This is extremely popular in restaurants and is not labour intensive at all to make at home. Cream, milk, vanilla, sugar and gelatin leaves to set. This makes a simple clean panna cotta. The great thing with many Italian desserts is that they can be prepared and made ahead, so ideal for a dinner party, NYE or just a romantic night in with a loved one.
Above these are sharing plates, so you would only decanter one panna cotta with fruit per person, no need to be greedy. Panna cotta is delicious with a fruit compote,soft berry fruits and grated dark chocolate.
250ml milk
250ml double cream
1 vanilla pod
25g sugar
3 gelatin leaves
20g dark chocolate
Selection of soft fruits
1. In a bowl with cold water, add the gelatin leaves to soften.
2. In a saucepan pour in the cream, milk, sugar, vanilla seeds and pod.
3. Bring to a gentle simmer, now remove the vanilla pod and discard.
4. Squeeze your gelatin leaves and add to your milk.
5. Remove from the heat to dissolve.
6. Prepare some pretty glasses or ramekins and pour in the silky cream. Pop onto a tray and place in the fridge to set for at least 4-6 hours.
Made in champage or wine glasses, when the panna cotta has set add the soft fruits and grated chocolate.
A simple Italian pudding with an incredible taste, not just a cream, silky, fresh set flavoured cream.
