The New Russel Hobbs -Illumina range – Food Processor and blender.
The Illumina collection is the latest range from Russell Hobbs. It has an innovative colour control light ring which changes colour to represent the speed change. The Illumina range offers a  style for our ever change tastes. 
I am testing the new food processor and blender unit. Being an Italian food writer and cookery teacher, any help in the kitchen is very welcomed. Here I have made two batches of spinach pesto with the food processor and blender as well as making fresh pasta with the food processor. A simple dish using the best of Italian ingredients.
Spinach pesto with hand rolled trofie pasta

Making the trofie pasta
300g 00 flour
Pinch of salt
3 large eggs 
Add the 00 flour , large eggs and a pinch of salt into the food processor and whizz until a ball of dough is formed.
Turn out onto a lightly floured surface and knead the dough for 8 minutes until smooth and bounces back when pushed with your finger. Wrap in cling-film and chill for a minimum of 30 minutes.
Spinach Pesto
150g fresh spinach, stalks and all
1 garlic clove, quartered
pinch of salt
50g parmesan, grated
40g pinenuts, un-toasted
60-100ml olive oil as required
Making the pesto takes literally second to combine and put together. The food processor takes the hassle away and produces the most amazing spinach pesto in under a minute.
Into the food processor add the spinach, garlic, salt, parmesan and pinenuts. Whizz for 10 seconds then add olive oil until the correct dropping consistency is met. Store in the fridge until required.
Make and roll the pasta by hand. Cook the trofie pasta in salted boiling water for 5 minutes, drain well and stir the pesto though the pasta. Spoon into large warmed bowl. Add some extra parmesan to the top if required and enjoy. This is delicious cold too, so prepare and make extra!
