Learn to cook authentic Italian pasta dishes with a modern day twist!

Listed below are details of the delicious pasta classes held from Carmela’s Pasta Room in Northamptonshire. These are exclusive small group classes for no more than four students at any one time, prices listed below are per person. If you have a passion for freshly made ‘Pasta’ then there is sure to be a pasta class to suit your requirements, budget and appetite. Have a look below and maybe treat yourself or a friend to a pasta class. Gift vouchers are also available.

Italian Pasta Making – Beginners Class 

Carmela will start at the very beginning and teach you the art of simple pasta making. Learn to make pasta the Italian way from a simple fresh egg  pasta dough and semola pasta dough (semola di grano rimacinata) to delicate strands of spaghetti, farfalle bows, gnocchetti sardi, garganelli, paccheri, cappelli, soprese and other hand rolled , unfilled shapes.  Learn to make decorative freshly pressed  (laminated) herb and flower pressed pasta dough. Pasta making is a hands on course. Simplicity at its best!

filled pasta – Intermediate Class

Carmela will explain , demonstrate and teach you the beauty of filled pasta. Refreshing basic skills from the first course initially. From a simple mezzaluna (half moon) filled pasta to a pretty tortellini, ravioli, casonsei, caramelle, and her famous dippy egg yolk raviolo. If time allows, Carmela will also demonstrate a quick cherry tomato sauce and freshly made seasonal pesto. You will use skills acquired in the beginners course, however attending the first course is not essential. This is a hands on course.

Colouring pasta by hand – Advanced Class

Learn to colour and master the art of stunningly beautiful coloured pasta. Carmela will marvel you with her passion, knowledge and love of pasta. Using vegetables and fruits as the colouring agent you will learn to colour and stripe pasta whilst making the dough into a variety of hand rolled shapes, both filled and unfilled. Attending the beginners and intermediate pasta classes would be advised but not essential as Carmela will guide you through each step.

A taste of sweet pasta

In this newly developed pasta class Carmela will guide you by teaching you how to make a variety of sweet pasta doughs. Transforming each dough into a variety of dishes. Chocolate pasta filled with hazelnut and mascarpone finished with an orange infused cream. Fresh pear filled mezzaluna pasta oven baked, deep fried pasta chiacchiere dusted with vanilla icing sugar and struffoli drizzled in honey and hundreds and thousands. A taste of something sweet as a treat or to finish off a delicious meal.

Gluten Free Pasta

Carmela will show you how to make 4 gluten free pasta doughs and form them into beautifully detailed, filled and unfilled pasta shapes. The importance is learning how to combine and roll the dough efficiently to minimise crumbling while keeping the pasta dough incredibly light.

Seasonal Italian (Savoury)

Carmela has now relaunched her seasonal Italian cookery classes. For these new classes you will learn how to make a vegetable or chicken stock, seasonal risotto, light and fluffy potato gnocchi paired with a slow cooked venison ragu and also light as a feather spinach and ricotta gnudi, poached and served with browned butter and grated Parmigiano Reggiano.

Italian sweets & treats

From a lightly infused classic tiramisu, to basil panacotta with hazelnut biscotti, marsala zabaglione, crostata (jam tart), and an orange polenta cake. The desserts will change periodically depending on soft seasonal fruits and the seasonality.

Carmela has the right to give up to 72 hours notice prior to cancelling a cookery course.  

If notice is given and if you need to change the date of your booked class, or cancel the booking, we can try to accommodate this up to 7 days before the due class date.  No refunds will be issued for last minute cancellations or no shows and a fee will apply for any requested reschedule.

Please note that the working ‘Pasta room’ where classes are undertaken is not a controlled environment hence any gluten intolerances cannot be guaranteed due to the nature of the class (airborne particles).
