A day was organised by Katy Truss for a select group of Midland Good Food Show, food bloggers at the very quaint and beautiful ‘Brompton Cookery School. The school is owned and run by Marcus Bean and is located in the rambling countryside of Shrewsbury. A little time to get to know each other was soon followed by an outdoor lesson in foraging in the blustery grounds of Marcus’s home and B&B, followed by a seriously interesting bread demonstration and cookery afternoon. Our bread expert of the day was Robert Swift author of the very delicious ‘Born and Bread, a fifth generation baker, and boy does he know his stuff!!
The demonstration was very in depth and showed various simple steps to create the perfect bread. We all then got to work making our various loafs. Using lots of fresh herbs and treats from the pantry we worked miracles. Whilst we were all busying ourselves, Marcus was creating a mouth-watering feast. Seasonal asparagus tarts with a wild garlic pastry, a beautiful ham joint, and select fine food products sent for us to try from some Good Food Show suppliers. Rob provided us with the most incredibly flavoured bread and Marcus won all our hearts with his chocolate mousse and handmade honeycomb.
