The change of seasons brings with it an abundance of different flavors and produce. I am also introducing all new students to my newly fitted Italian pizza oven, from September I am able to offer a different and very exciting variation on some classes using an outdoor cooking experience. You may need to bring along your coat! Below are this seasons classes that will take us just beyond Christmas 2013. Gift vouchers are available for all classes taught in my kitchen.

All of the classes listed below are held at Carmela’s Kitchen in Northampton, my family kitchen.
Tuesday 11th September, Thursday 24th October 
Italian Autumn pasta making and gnocchi day course. 
Learn to make pasta the Italian way, from a simple dough, to spaghetti, filled ravioli, farfalle bows, spinach and ricotta mezzaluna filled pillows. Pasta making is a hands on course, so bring along your apron and a container to take away some pasta.. Also an added gnocchi demonstration, simple potato puffs in a tomato sauce. We will then sit down to eat our delicate pasta with a glass of vino.

Thursday 10th October
Super sausage making!
Using fennel, chili, garlic to create Italian flavour full plump sausages. Fresh herbs will also be key to the perfect taste. Using a sausage machine that has been in my family for over 30 year! Mince our meat, flavour and stuff……., Incredible fun to be had!! Sausage butty anyone!!

Wednesday 6th November
Traditional Lasagne and Parmigiana
Two very traditional family dishes, loved by all Italians. Learn to master both and take them home to share with your family.

Friday 29th November
Risotto & Polenta made easy.
Learn to make a simple Autumn risotto using seasonal vegetables and herbs and master using polenta in savory and sweet dishes. Risotto and prosecco for lunch.

Thursday 21st November
Seafood and fish day.
Italian fish pie with a polenta and mashed potato top, mussels in a red wine and tomato sauce, seafood risotto and a fabulous fillet of white fish flavoured with pesto and wrapped in parma ham. Hungry yet!

Pizza & Calzone, Using an authentic out doors pizza oven.
How to make the perfect pizza and calzone (folded pizza).  Mini stuffed dough balls filled with mozzarella, basil and baked peppers.

Tuesday 8th October
Italian Desserts
We will begin by making an absolute classic,  Tiramisu followed by a panna cotta (set cream) with a fruit berry salad and sauce, Zabaglione served warm over pan fried seasonal fruit, and an affogatto, espresso and vanilla ice cream. If time allows then a little baking too, dark chocolate and amaretto cake………Delicious and fresh served with coffee.

Thursday 14th November EVENING DEMO 
Antipasti with a Southern Italian twist
Learn how to make basil and green olive pesto, caponata aubergine dip, a variety of bruschetta toppings, flavouring olives, mozzarella stack and baby filled sweet peppers.
Enjoy tasting the antipasti with a glass of wine. A perfect night out for you and your friends.

Tuesday 17th December, Thursday 19th December
Christmas Hampers……Gift day.
A perfect hamper to keep as an indulgence or share, the choice is yours.
We will make small samples of a variety of Italian treats. From panettone, limoncello, cantuccini, panforte and if time allows torrone. You will need to bring along a basket to take home your gifts.
