A Passion for Pasta with Carmela Hayes (Half-Day Class)

Discover the true art of pasta making with Italian cookery tutor and pasta specialist, Carmela Hayes, at the Yorkshire Wolds Cookery School. In this hands-on half-day class, you’ll learn the secrets of creating fresh, authentic pasta from scratch – the way it’s done in traditional Italian kitchens.

Carmela, an expert pastaia (specialist pasta maker), will guide you step-by-step through making three vibrant pasta doughs – classic egg, basil, and tomato – before teaching you how to laminate and shape delicate tortelli filled with spinach and ricotta. You’ll also watch a demonstration of asparagus pesto, a fresh, flavourful sauce perfect for any pasta dish.

The colouring technique you will learn can be applied to many different styles of pasta at home providing you with skills to impress family and friends creating the most colourful and tasty plates of food.

Throughout the session, Carmela will share her passion for seasonal Italian cooking, exploring flavours from the 20 diverse regions of Italy – from the butter-rich north to the olive oil and seafood of the sunny south. You’ll leave feeling inspired, confident, and ready to recreate colourful, restaurant-quality pasta dishes at home.

Lemon cavatelli pasta and sauces class.

Carmela is a passionate Italian cookery tutor who specialises in the art of making pasta known as a pastaia (specialist pasta maker).

From simple yet delicious dinner party dishes to elaborate desserts and mesmerising yet stunning pasta dishes. Carmela’s mantra is to cook all dishes within our UK seasons whilst showing and highlighting the beauty that can be made and presented from the humble Italian kitchen. Carmela’s classes will open your eyes to the wonder and possibilities that can be found within the arms of the 20 regions that embrace Italy. From the Northern regions which feature heavily the use of butter, rice, polenta, truffle and game to the southern regions which showcase the abundance of seasonal vegetables, fruits, fish, seafood, pasta and olive oil. A feast for the eyes as well as the tummy!

All students will create durum wheat semola pasta cavatelli, infused with lemon zest and fresh thyme leaves, learning the art of shaping the pasta into small shell forms with a cupped centre. Students will then make two pesto sauces; olive pesto and a sun-dried tomato and roasted pepper pesto. Bursting with fresh Mediterranean flavour you will never buy a jar of pesto from the shop again!

Carmela will demonstrate her signature pork, beef and veal Bolognese sugo for all students to taste along side the sauces at the end of the class.
