Yes, Pimms o’clock, can now be anytime of the day. Jam on your toast, lashings between a Victoria sandwich or spread generously over fresh bread.
I love jam, especially home made jam, and I simply adore ‘Pimms’, so a perfect combination for your jubilee celebrations. The jam will take you 30 minutes from start to finish. So please find a little time, for some afternoon delight!!

700g British strawberries, hulled
400g jam sugar
half the juice of a lemon
50mls pimms

1. Sterilise your jars as normal, wash them and pop them in a low oven 120C for about 15 minutes. Or run them on a dishwasher cycle with no detergent. Place a saucer into your freezer to test the jam setting point.
2. In a blender add your strawberries and blend. If you prefer a chunky jam, then do not blend, just add to your jam pan.
3. Transfer into your jam pan the blended strawberries and simmer for about 5 minutes.
4. Add in your jam sugar and lemon juice and simmer to boiling point and boil for around 10 minutes then add the pimms and boil for a further 2 minutes. Test the jam by placing a small tsp full onto the saucer. Push the jam with your finger, if it wrinkles its ready.

Transfer to your sterilised jars and seal, label and leave to cool. Delicious strawberry jam with a hint of pimms.
