You can tell when its the holidays in my house. My food cupboards, fruit bowl, fridge and snack draw have taken a huge hit. All I keep hearing is ‘Mum what can I have to eat now’. ‘Mummy when are you going to get more food’. I can’t keep up. So I have decided that every other day I will bake biscuits or flapjacks even a tray bake, when its gone its gone. That’s my new saying!!

So here is one of my simple, cheap biscuits for you to try. I love these for their simplicity and because you need no eggs, they are still moist and so scrumptious and moreish too.

200g self raising flour
100g golden caster sugar
25g ground almonds
1 tsp vanilla
75g margarine
milk to form dough, 3-6 tbsp 
Apricot jam or marmalade to fill
1. Preheat the oven to 190C.
2. Line or grease two baking trays.
3. Add all of the ingredients into a bowl. Using a wooden spoon mix, then use you hands to form the dough. You may need a little more milk, or flour so add accordingly.
4. Cut the dough into 12 sections, or pinch the dough in to balls like I do. 
5. Flatten them. Place onto the tray and make an indent into the centre of each biscuit. Make sure you do not put your finger right through.
6. Add jam or marmalade into each centre. Yum
7. Bake in the oven for 15 minutes.

I often double the mixture to make more. They normally last two days in my kitchen and keep for up to five days in a sealed container.

Perfect treat for your children, to take to the park or picnic. Enjoy.
