We are delighted to be welcoming back Carmela Sereno Hayes to Bay Tree Cottage for 2019. Carmela specialises in the art of making pasta and is the author of two beautiful cookery books ‘A Passion for Pasta’ and ‘Southern Italian Family Cooking’, with her third cookery book due for release August 2020.
Come and join her workshops throughout the year and learn how to cook simple, inexpensive, flavoursome dishes using good quality seasonal ingredients…perfect for enjoying with family and friends.

During the day, and starting with the basics, Carmela will guide you into becoming a competent pasta maker as you master hand rolled cavatelli and gnoccheti sardi, filled tortellini and ravioli, with accompanying sauces including a traditional browned butter and sage, seasonal pesto and a classic tomato sugo.
Friday 15th June 7-9pm – Italian Fish & Seafood – £24.50pp
Learn how to confidentially clean, prepare and cook langoustine and fresh squid and discover how to fillet a round fish and a flat fish and prepare in two different way….one pan-fried in aqua pazza and one incarta. Demo only with a little hands on teaching.
Friday 27th September 7-9pm – Pasta & Prosecco – £24.50pp
Spend an evening learning how to make three types of pasta known as cavatelli, gnocchetti sardi and farfalle, followed by a demonstration of a seasonal filled pasta tortelli, served with a sausage and saffron sauce and a pea and ricotta pesto. When all the cooking is complete, you will be able to sit back and sample the results……accompanied by a glass of prosecco!
Thursday 28th November – Festive Italian Desserts – 7-9pm – £24.50pp
Get ready for a festive feast as you learn how to make tiramisu doused in amaretto and layered with dark chocolate and clementine, a mixed nut and cherry cantuccini biscotti, a classic panforte and torta della nonna sprinkled with pine-nuts.
